Do Eggs Raise Cholesterol?

Few foods have flip-flopped in reputation as much as eggs, and patients ask me about this constantly. My honest answer: for most healthy people, eggs have a much smaller effect on blood cholesterol than we once believed.

Eggs are high in dietary cholesterol, but for most people, dietary cholesterol has less impact on blood cholesterol levels than saturated fat does. Your liver adjusts its own cholesterol production in response to what you eat, which blunts the effect for many people.

Who should be more cautious:

  • People with diabetes, who may be more sensitive to dietary cholesterol’s effects on blood lipids
  • Anyone with existing high LDL (“bad”) cholesterol or a strong family history of heart disease

My advice: For most healthy adults, one egg a day is not a concern, and many people can safely eat more. If you have diabetes or known heart disease risk, it’s reasonable to moderate your intake and talk to your doctor about what’s right for you.
